Pasta
The gastronomy in Calabria is based on sharp taste. The influence is reflected by many different cultures which during the centuries have immigrated to the region. The pasta is usually self-made, and the sauces are generally made of beef, pork, lamb or veal with tomato submerged in pure olive oil, refined with spicy red pepper. There are many different specific types of pasta, eg filatelle, fileja, scialatelle, lagane and cavatelli. To make the fileja for example, the dough is rolled into short ropes.
Especially in the mountainous interior, the culinary traditions well preserved. Especially the mushrooms in the Pollino and Sila, either loaded or roasted on the table, you should have tasted.

Meat

The meat is usually fried or cooked in its own juice. We recommended you to try kidneys with potatoes, peas and artichoke which is cooked in the oven. Wither fresh or canned vegetables are usually served as a side dish.

Fish
From every point of Calabria you can reach the sea very quickly. There are hundreds of recipes for two of the typical types of fish, tuna and swordfish. It is served fried, in soups, in sauces or in casseroles baked in the oven.

Wine

For Calabrian wine, the Cirò wine region is the place to visit. Here the Gaglioppo grape is produced and used in making excellent red wine. The wine process is still the same from the time of when ancient Greeks cultivated Calabria. The other famous wine regions of Calabria, which are not less famous, from the provinces of Cosenza and Reggio Calabria.
